Thanks for posting this, but I've found it is infinitely easier to use a blender and slowly pour the oil through the hole in the top, or even use a stick blender, blending the ingredients with one hand and slowly pouring in the oil with the other hand.

What I like about making my own mayo is that I can make it any way I like to suit my own tastes - tangy, peppery, mild, sweet, whatever.

yes to the blender method!! and use good olive oil - can't beat the taste.

Can also make Hollandaise sauce this way.

Ditto on the blender hollandaise, but no no no to the olive oil! I can't stand the taste of olive oil. It gags me. I use a very mild, bland vegetable oil for mayo, and season it in other ways if I want to, but not with olive oil. Sorry.

For hollandaise, only real butter.
