Kansas Kaviar Dip
QB member Donna Freak just posted a dip recipe that her niece made and it made me want to post one that my family uses that is very similar.
2 cans original or hot Rotel (drained) (I use 1 can of each) 1 can Black Beans (drained) 1 can Blackeye peas (drained) 1 can peg corn (drained) stalk of green onions chopped 1/2 red onion chopped 2 teaspoons cayenne pepper 1 small bottle Zesty Italian Dressing Mix all ingredients in large bowl and put in fridge for at least 3 hours. My family eats Totitos with this dip but I love to put several spoonfuls of this dip in the middle of a rolled up tortilla. YUMMY!! |

Peg Corn is also known as "Shoepeg" Corn. I buy the Green Giant brand "White Shoepeg". I'm also glad you liked the Wichita Quilt Show that was held in June. It did feature some great quilts. :) |
Made this yesterday. Very good. I only used 1 tsp of cayenne pepper. I also squeezed lime juice over it and it was a big hit with my guy. Thanks.
