This sounds like a good quick and easy(my kind of recipe). Is this recipe from the King Ranch in So. TX. ? DH is from the Cuero/Goliad(S. of San Anton) area and has talked about the King Ranch.

Sadly, the history and origin of King Ranch Chicken is a bit murky. While the name invokes that epic south Texas ranch—so gigantic it covers more ground than the state of Rhode Island—the ranch claims no ownership on this recipe.
