A friend of mine is looking for some help tracking down a recipe:
"My great aunt used to make a recipe she got from my Sicilian great grandmother. It was raw mackeral "cooked" ala ceviche, in vinegar and mint. Aunt Grace absolutely refused to share any recipes with my mother. It's one of mom's favorite dishes for Christmas Eve and I'd like to make it for her this year, but I can't find a recipe for it any where. I have scoured the internet to no avail. Any help is welcome :-)"
I figure that with as many people frequent this board, maybe someone somewhere may have an idea what this may entail! Thanks!
1 (8 ounce) fillet orange roughy, or other firm white fish fillet
15 limes, juiced
1/2 pound cooked shrimp small (optional)
3 tablespoons chopped cilantro
6 green onions, chopped finely with about 3 inches of the green
1 red onion, diced finely
2 avocados - peeled, pitted, and chopped
2 fresh tomatoes, chopped finely
2 celery ribs, chopped finely
pico de gallo
2 teaspoons salt
1 pinch black pepper
Cut the raw fish into small 1/2" cubes and spread out in the bottom of a glass dish. Pour in enough lime juice to cover the fish; cover dish, and refrigerate for 24 hours. Remove fish from the refrigerator, and mix in shrimp, cilantro, green onions, red onions, tomatoes, and celery. Stir in pico de gallo to taste, and season with salt and pepper. Cover, and refrigerate for 12 hours. Add chopped avocado before serving. Serve with crackers.
I guess you could substitute vinegar for lime juice and mint for cilantro and it would work.
I'm thinking that the recipe she's looking for doesn't have the vegetables in it. I'm not sure, but I know she's got good Google-fu, and if she's stumped, it's very hard to find! But thank you! :)

2 pounds Cooked Salad Shrimp, Halved If Larger Than A Small Dice
1 Medium Seedless Cucumber, Cut Into Small Dice
2 Avocados, Cut Into Small Dice
8 Medium Scallions, Sliced Thin
2/3 cups Chopped Fresh Cilantro
1 cup Ketchup
2 Tablespoons Tabasco Sauce
1/2 cup Lime Juice
1/4 cup Extra Virgin Olive Oil
Tastes-Like-Fried Tortillas Or A Bag (16 Oz. Size) Tortilla Chips, To Serve
Mix all ingredients in a medium bowl. Cover and refrigerate. Serve with Taste-Like-Fried Tortillas or tortilla chips for dipping.
Makes 1 heaping quart.
