Looking for stuffed potatoe recipe
 
My DH grew up beside a German family and the mom used to make potatoes stuffed with ? Ground beef. I would love to find the recipe if anyone might have one. Thanks!

That sounds delicious, I will be waiting for a recipe as well. I haven't in a long while, but have made twice baked potatoes, I baked my potato and halved it when it was done, then sprinkled grated cheese on each half and baked or placed in the broiler long enough for the cheese to melt. I would think you could bake the potato, and scoop a little of the potato out then add cooked and seasoned to your taste, ground beef and bake a little longer, as you might do a stuffed bell pepper, perhaps using tooth picks to hold the two halves together. I would definitely use cooked ground beef. I love baked potatoes, but only with salt, pepper and butter and the twiced baked ones. This sounds like something I might want to try when my kids come in to visit. We all like baked potatoes. Cooked sasuage would be good as well. Thanks for the idea.

I have a recipe for stuffed potatoes that we love.

Bake your potatoes.
Brown your ground beef and drain. Set aside.
Cut bell peppers and onions into large pieces and place in pan and cook lightly or to your desired doneness(we like ours crunchy). Season with salt, pepper and celery salt , to taste.
It is time to assemble your potatoes. Cut your potato in half and then in pieces top with butter, trying to leave the potato in the center of the plate. Then top it with some of the cooked beef, peppers and onions and the with cheese of your choice. Place in the microwave to heat the cheese.

Makes a really pretty plate when served. Nice for luncheons also.

Had our own version of poor mans stuffed potatoes, have spaghetti the night before, take the left over sauce...bake the potatoes till tender, scoop out the center...blend the center of the potato /easier if you mash em down with a fork...then add the left over spaghetti sauce (heat the sauce before adding to the mashed up potatoes...sprinkle with the cheese of choice. Place on a cookie sheet, bake at 350 till the cheese melts,,, good way to use your left over's from the day before.

I make what I call potato boats. Bake your potatoes till done. Cut in half & scoop out half of the center. Open & heat a can of chili or make your own chili as I do. Mash what you scooped out & add to chili. Fill the potato with the chili mix enough to flow over the sides. Top with cheese of your choice & heat to melt the cheese. Very yummy.

I have a different "version" of stuffed potatoes. Here it is; we love 'em! Bake the potatoes until very well done. Cut a slit, scoop out the interior, leaving a small amount around the peeling for the stuffing to have room. Mash the potatoes, add cream cheese, sour cream--don't know the amounts on these 2, but you can tell by tasting, and butter. Mix well, return to the potato skins. Reheat until hot and add a piece of cheese on top, and some Parsley Flakes. We love these with Meat Loaf, Ham, most anything. You can also pour chili over the top if you have any left!Mariah

My mother made this hamburger and potato pie.
Brown 1 pound of hamburger and onion together.
Drain grease.Make your favorite 2- pie cruct recipe and into a empty shell; layer:
A little hamburger/onion mixture
Sliced raw potatoes.
salt and pepper
Repeat layers till pie pan is filled. Put top crust on. Cut slits. Brush a little milk or egg white on top. Bake at 350 degrees for 1 hour or until crust browned and you can for a potato and it's tender. Cut and eat!

Thanks so much for the recipes, I LOVE twice baked potatoes and a lot of the other recipes sound so yummy. I read the posts to DH and he said he thinks this neighbour lady hollowed out the inside of the potatoe, sort of like coring an apple and then filled it with the meat. I have an apple corer but it also slices them so that won't work, hmmm, have to keep searching.
