Looking For:
 
Hi I'm from Ontario, Canada and I'm looking for a recipe that has corn chips and hamburger in it. I tasted it a long time ago and I think it was a casserole if I remember correctly. Would anyone have such a recipe and could you post it? Thanks so much.

I don't have a recipe for you, but was intrigued.
So I Googled ... and found a gazillion possibilities that had me more tempted!!

Perhaps try that and see if you find a recipe that looks familiar to what you had in the past.

I am not sure if this is what you may be looking for. But here goes:

Pancake Burger Bash. (Serves 4 to 6)

1-1/2 lbs. ground beef
1/3 cup chopped onions
1 tsp. salt
2-3 tsp. chili powder
1 can (8oz) tomato sauce
1 can (15-16 oz.) diced tomatoes
1 can (15-16 oz.) whole kernel corn

Dumplings
1-1/2 cups Pillsbury Hungry Jack Buttermilk or Extra Lights Pancake Mix
1/2 cup crushed corn chips
1 egg
2 Tbsp cooking oil
1/2 cup water

In electric skillet brown ground beef and onions; drain. Stir in sale, chili powder, tomato sauce, tomatoes with juice, and corn (drained) Simmer 10 minutes; stir occasionally
Dumplings: to measure pancake mix lightly spoon into cup; level. In bowl combine pancake mix with crushed corn chips, add egg, oil, water; mix well. Spoon batter (like drop biscuits) over bubbling meat mixture. Cover, simmer 15 mins, without removing lid. Dumplings will be puffy and dry on top. Pass the catsup.

I usually serve with a side salad . I have also used what ever pancake mix I happen to have on hand with no change in flavor :)

This is a favorite and was posted in a magazine as winning a blue ribbon at the State Fair in WI in 2001:

Tex-Mex Casserole
1./2 lb. HB meat 1 T. Chopped red bell pepper
2 T. minced onion 1 c. shredded Cheddar cheese
1 T. seasoned salt 1/2 shredded Colby-Jack cheese
8 oz. tomato sauce 1/2 c. shredded Monterrey Jack cheese
1 c. whole kernel corn 1/2 c. shredded Colby cheese
2 1/2 c. taco chips
Preheat oven 350 degrees. Brown meat and onion. Add salt, tomato sauce, corn and peppers. Simmer 5 min. Crush 1 1/4 c. taco chips for bottom of medium casserole dish. Pour meat sauce over chips. Layer cheese on top. Top with remaining chips. Bake 20 min. or until cheese melts. Serves 6-8.

Here's another favorite:

Enchilada Casserole
1 lb. HB meat, brown 1 can Cream of Mushroom Soup
1 Onion, chopped Plain Dorito chips
1 can Enchilada Sauce Grated Cheese
Green chilies
Brown meat and onion. Add soups, sauce and chilies. Spray 9x12 pan with Pam. Place doritos in bottom of pan, then mixture. Top with cheese. Bake at 350 degrees until bubbly.

One of the most popular things at our football games in the concession stand is Frito (corn chips) Pie. You put chili con carne over corn chips and top with chopped onions and shredded cheese. Delicious. I keep chili made all winter and anyone can go in and just make a Frito Pie any time of day for a snack or a meal. Great...if you like chili. :)

There is a recipe I make it is called Tostada Casserole. You can google it and pick the one you think you would like. There are many different recipes for Tostada Casserole. Each is just a little different.

I see you have some great recipes here for your dish. But, whenever I am looking for a recipe and don't know where to find it, I go to recipegoldmine.com. There are really great recipes there, including some from your favorite restaurants. I wanted you to have this link for the future searches.

Oh, I almost forgot! There is a great recipe for something similar to this on the side of Mission tortilla chips bag. It is really nice and uses green chili's as one of the ingredients. So yummy is the sauce, I have used it in a chicken version as well.

And if you love Mexican food, there is a recipe for tamale pie on the side of the alber's corn mealbox that is to die for!

Taco Soup easy and it goes a long way. 1-2 pounds ground meat, 1 can Rotel {optional if you do not like pepper }, 1 pkg dry Ranch Dip. 1 pkg dry Taco mix, 1 can each of red beans, white beans, and black beans and kernel corn, 1 quart of broth, 1 can stewed tomatoes and 1 can ,small , tomatoe sauce. Cook the ground meat till done, add the 2 pkgs dry mix, and all cans as well as r the broth. Cook about 1 hour on a low fire. Serve with Fritos , the small ones, on the top. Alos could serve with a dollop of Sour Cream, and sliced black olives. Bon Appetite !
