bigredharley 05-25-2013 02:59 PM

My sister's secret to great macaroni salad is .......... Kraft Cole Slaw Dressing!

Mix with macaroni with chopped egg, finely sliced celery, a little mustard and sweet relish.
Salt and pepper to taste.

My favourite is to add drained and flaked salmon to the mix.

adamae 05-25-2013 03:30 PM

QuiltE, that sounds so good! I do same only with real mayo instead of dressing. Will try yours next time with salmon.....

quiltingcandy 05-25-2013 04:02 PM

My MIL's Shrimp & Macaroni Salad

2 cans of tiny shrimp - any brand will do - for some reason fresh bay shrimp does not
1 package of salad macaroni - cooked, rinsed and cooled
1 cup of chopped pickles - we use Kosher dill pickles
1 cup of chopped celery
1 cup of chopped green onions

Mixed together with mayonnaise - we use a little over a cup - depends on how you like it covered then garlic salt and pepper to taste.
Garnish with sliced hard boiled eggs and paprika sprinkled on top.

It is always a hit.

I like the cole slaw dressing as it is thinner, and not so goopy on the salad! :D

Another nice twist to a macaroni salad is to add some grated parmesan.

tesspug 05-25-2013 05:01 PM

I cook one box of macaroni in salty water. The water is suppose to be as salty as the ocean. Chop 1/2 onion, three celery sticks, three or four sweet pickles and two chopped hard boiled eggs. Mix with the macaroni. For the dressing
1 1/4 cup mayo, 2 tablespoons vinegar, 1 tablespoon sweet pickle juice, 1 teaspoon dry mustard, a sprinkle of paprika, salt and pepper. Mix with the macaroni and cool. It's better if it sits for a while. Adjust spices before serving. I also like to add albacore tuna.

sweetpea 05-25-2013 06:53 PM

I like 2 cups cook macaroni, 1 can of stawed tomatos, and 1/4 cup sugar {more or less as you all} mix together. best of set a few hours.

Treasureit 05-25-2013 06:58 PM

I don't know the amounts...but I add Miracle Whip, lemon jc., eggs, relish, mustard, celery, green onions, sometimes black olives. You can add pimento, or cucumber too. I have found that the miracle whip makes a big difference for our family to like it. Oh...a secret ingredient I add is a teaspoon or 2 of sugar. Don't tell on me. You can't taste the sugar it just gives it a different twist.

CRO 05-25-2013 07:18 PM

I don't have the recipe in front of me, but if this interests you let me know and I will send it.
Macaroni of course and chopped celery, green onion, black olives, hard boiled egg, onion, and and tuna. Dressing is mayo, mustard, sugar, vinegar, milk for moisture and garnish with quartered tomatoes.
I hate HB eggs so don't use them. Just takes less milk to moisten.

JENNR8R 05-26-2013 03:19 AM

I like to add cubes of cheese to mine... The secret of being a good cook is to double the cheese in the recipe or just add it in if it's not already in the recipe. :D

Vat 05-26-2013 04:03 AM

I have a wonderful one. Have been using it for years. Here it is:

Vegetable Macaroni Salad

I box (16 oz.) macaroni
1 t. salt
1 T. oil
Cook macaroni with salt and oil according to pkg. directions (Don't over cook). Drain. Put in a large mixing bowl.

1 large green peper, chopped
1 large onion, chopped (optional) (I don't use)
4 carrots, shredded
Prepare in food processor and add to macaroni

1 can sweetened condensed milk
1 cup vinegar
1 cup sugar
2 cups mayonnaise
1 t. salt 1/4 t. pepper
Blend well, add to macaroni mixture, combining thoroughly. Chill at least 5 hours. Enjoy.

How can anything with sweetened condensed milk in it not be good ! ! !? ! !

Teacup 05-26-2013 04:20 AM

Vat, that dressing sounds great...but isn't the quantity too much for one box of macaroni?

damaquilts 05-26-2013 04:45 AM

Hmm after reading these mine is just plain. Elbow macaroni, tuna, mayo, onion, garlic, celery or celery seed. I make up a big bowl and eat it for a week. :) Sometimes after a day or so I add a little ranch dressing to a serving just for something different.

Cris 05-26-2013 04:49 AM

Quick, easy Macaroni Salad

Portions depend on how much you want to make and your preference

macaroni-cooked
mayo made with olive oil
cubes of cheese-sharp cheddar
red onion-chopped
pimento-from jar
green peas-canned

mix and fridge until chilled

enjoy

QuiltE 05-26-2013 05:48 AM

Just remembered .............

Quickie Macaroni Salad
Make Kraft Dinner
Add some mayo
That's it, that's all!

............. and of course, toss in any of the add-ins mentioned above. Though that means more work and kind of defeats the simplicity of the quickie!! :D

cherrio 05-26-2013 06:26 AM

This is our family's favorite!

Libster 05-26-2013 07:59 AM

I make mine with a box of small shells cooked in salty water. Drain and rinse. Dump into a large bowl. Add two large chopped tomatoes and one large chopped green bell pepper. Cook 1 lb. of bacon in microwave, crumble and add to bowl. Add salt to taste and lots of black pepper. Stir in Miracle Whip until everything is coated to your liking. Let marinate for at least 2 hours.
My family loves this, 'specially with fresh garden tomatoes. It keeps well in the fridge IF it lasts that long.

mjhaess 05-26-2013 08:09 AM

I use 1 box of elbow macaroni. chopped celery, chopped onion, six egg yolks mashed..Add miracle whip, sweet pickle juice, prepared mustard to mashed egg yolks and mix well...Pour over macaroni, celery and onion and mix. Sprinkle paprika on top..Let it sit in frig over night...

rocklady 05-26-2013 08:39 AM

Here's a different twist.
A pack of the colored rotini - I think it's veggie.
Veggies of your choice. Cucumber, green pepper, cherry tomatoes, black olives, onion, celery, carrots, etc.
My daughter just said that mini pepperoni is good in this too. Not for me.
A bottle or so of Italian dressing and let marinate for a while.

Jo Anne B. 05-26-2013 02:41 PM

I routinely make the tri-colored pasta(3 cups) salad, I use red onion, 8oz pepper jack cheese- small cube, 2 roma tomatoes deseeded, 8oz pepperoni or 8oz hard salami, marinate overnight in Italian salad dressing(last time used Olive Garden salad dressing found at Sam's club)(big hit)

Halo 05-26-2013 03:10 PM

My families favorite is macaroni, frozen peas(still frozen & not cooked, you can use canned peas, but not me), cheese cut in squares, can of chicken drained (you can also use tuna), mayo & season salt to your liking. Very yummy.

janjj 05-26-2013 04:32 PM

This is an interesting post. The only thing I can comment on is years ago we ate at "The Machine Shed" at the "Living History Farms" in Des Moines, IA I joked with the waitress wondering if they had recipes for the cole slaw and meat loaf. When left the chef came to meet us - recipes in hand for us reminding me that they were for 100 people. BUT he was quite adamant about the dressing. Buy 'salad dressing' not Miracle Whip. M. Whip he said is not salad dressing ! Up until that I had always used M Whip. Never again !

sassy granny 05-26-2013 04:54 PM

Macaroni Salad. cook macaroni in salt water until done, rinse in cold water and drain. Add chopped boiled eggs, chopped onion, pickle relish, chopped celery, mix with mayonaise or Miracle Whip and a little mustard and black pepper. You can omit veggies you don't like or add others you do like. I sometimes use chopped sweet pepper also. Be sure and cook macaroni in salt water. If you don't it will be flat tasting and you can't get it salty enough just by adding in the salt and mix in. This is better if made a few hours before serving and let flavors meld.

granny64 05-26-2013 04:57 PM

Pasta Salad
Boil a pack of spiral pasta. Add cut-up boiled shrimp, carrots, celery, black olives, green olives, tomatoes. Add as much Italian dressing to your taste. Refrigerate, preferrably overnight. Serve. I make this a meal by itself.

onthelake 05-27-2013 04:38 AM

I don't have a recipe, but I love a good pasta salad. A friend in our sewing group always has the best pasta salads so one day I asked her what for her secret to such great tasting pasta salads. She said to begin with 8 oz of pasta of your choice, cook as directed in salted water, drain and while pasta is still hot, stir in 2 TBS of vinegar. The pasta absorbs the vinegar as it cools and really brightens the taste. When pasta is cooled, add other ingredients according to taste.

Maureen 05-27-2013 04:43 AM

I make mine with elbow macaroni cooked, two chopped eggs, one can of tuna drained, chopped black olives and some shredded carrots. I dress it with Hellman's Real Mayonnaise.

Mkotch 05-27-2013 04:48 AM

When mac is still warm after cooking, I toss with Italian dressing (bottled). Later, I add onions, celery, grated carrots, etc. and then bind it all together with mayo.

teacherbailey 05-27-2013 05:50 AM

Kitchen Sink Pasta Salad:

In a large bowl, mix: One 16 oz box of pasta, cooked (I use rotini, you can use your favorite), two cans of small pitted black olives, two cucumbers diced to about 1/2" dice, two large ripe tomatoes diced to the same size, a chopped green pepper if you like it, three chopped celery stalks if you like them, one zucchini sliced thin and slices quartered, and one yellow squash prepared the same way. Add in 3-4 thinly sliced green onions too, with some of the green part. This is a mix and match salad so just put in and leave out what you want! Mix all together. Pour 3/4 of a 16 oz bottle of Zesty Italian salad dressing over all and toss to coat. Refrigerate at least a day until ready to serve. Mix in 8-12 oz shredded cheese (I use sharp cheddar) and as much of the rest of the dressing to make it the way your family likes it. After serving, you can add leftover raw veggies to this for the next day and some more dressing if needed. My family loves this no matter what I do to it, as long as I leave out pepper and celery.

Teacup, the macaroni soaks up some of the dressing, so no it is not too much ! ! This recipe makes lots, so it is a good recipe for Family gatherings, church socials, etc. etc.

This sounds about what I use, but I really like to add some chopped up cheese, velvetta is great, instead of the tuna.

DJ 05-27-2013 02:59 PM

My version:
1 package multi-colored spiral pasta, cooked
1 package frozen mixed vegetables (I like Fiesta Blend)
Your favorite bottled creamy dressing (I personally like something on the sweet side like Johnny's Jamaica Mistake) enough to moisten ingredients "to taste"
Mix together, cool, enjoy.
You can add extras as you like. Sliced ripe olives; chopped sweet onion; chopped artichoke hearts, cheese cubes, shrimp, etc.

girliegirl 05-28-2013 09:15 AM

Vat, I wanted to tell you that I tried your recipe and it is fantastic! I made half recipe and the dressing was all absorbed. A friend tasted it, couldn't figure out what was in it, and asked for the recipe.

linmid 06-04-2013 03:27 PM

janjj,

Do you mean something like Ranch Dressing or is there a real "salad dressing"?
