My favorite soup
 
My favorite soup is Hamburger Soup. A friend gave it to me 20 years ago and my husband gets so excited when I make it. It is soooo easy to make and is delicious.

3 T butter, 1 1/2 lb. ground chuck or lean hamburger, 12 oz. tomato juice, 2-10 1/2 oz. french onion soup, 2-10 1/2 oz. beef consumme, 2 cups water, 4 sm. carrots sliced, 4 sm. potatoes cubed, 1 1/2 c. celery and tops, 1/4 c. parsley, 2 bay leaves, 1/2 T Italian seasoning, 20 whole black peppers. Add beef to melted butter in large kettle. Cook till brown. Add rest of ingredients.Boil, simmer 45-60 minutes.

I know it sounds like a lot of ingredients, but it takes no time to make and it is so yummy. I make it every two weeks. I think you could just use regular hamburger and discard the juice from it.

Its a good base recipe...if you take and use chicken stock instead of the beef, replace the potatoes with pasta and replace the beef with two cans of of red or white kidney beans you will have my version of minestrone.
I usually throw in the mixed frozen veggies.
You can swap out the tomato juice for canned diced tomatoes too.

My Mother made a soup like this all the time. One week it was 'COWBOY STEW' and the next week whatever was popular with us six kids.
Also there is a 'NOTHING' soup because it doen't have any meat. Lg. can of V8, 1/4lb. of butter , what ever veggies you have and some pasta. Must be real butter for flavor and calories.

We are soup-a-holics. THANKS! Love quickies for work nights! Leftover soup just gets better over the next 2 days (IF it lasts that long).

We make a similar one but call it Hamburger stew . We add tomato instead of juice .Boil the hamburger in the pot with water and beef broth, add oinons, celery, carrots, potato, add elbow macoroni very last .(watch out the mac will soak up the broth so don't use to much ) My mother use to make this for 8 kids . She sure did know how to make a dollar stretch .lol
