No-peek stew
This is a recipe that I found some time ago in an Amish cookbook. Myself, family and friends hold this recipe as a favorite. Hope that you enjoy it as well!
No-Peek Stew 2 ½ Pounds stewing beef, cut fine. 1 Onion, chopped. 6 Carrots, diced, sliced or cut. 2 Potatoes, cubed 1 Teaspoon sugar 1 Stalk celery, thickly sliced. 2 Cups tomato juice 2 Teaspoons salt 2 ½ Teaspoons Minute Tapioca. Preheat oven to 250 degrees. Place all ingredients in an oven-safe dish. Cover tightly. Bake for 4 hours. No need to peek at this delicious stew. Feel free to change it up using your favorite vegetables. |
Sounds like a great dish to make up for after church on Sunday. Put it in the oven and a yummy noontime meal will be waiting for you when you get home.

We started adding a 1/2-1 Cup of red wine to our beef stews and the meat comes out tasty and tender.

I have a similar recipe but I call it "Quilt All-Day" stew (can you guess why). Mine uses cream of mushroom soup instead of tomato juice. I have also added about 1/2 cup each of frozen corn and peas the last 1 1/2 hrs. of cooking time. A bay leaf also adds a good flavor. This can be cooked in the crock pot for 6-8 hours.
