I found this recipe in a "Country Door" catalog I get in the mail -- they are delicious!!

PECAN PIE MUFFINS

1 C. light brown sugar
2/3 C. softened butter
2 eggs, beaten
1/2 C. all-purpose flour
1 C. chopped pecans

Preheat oven to 350º F. Grease a muffin pan (I used regular but a miniature muffin pan works good too). Mix together the brown sugar, butter and eggs. Then add flour and nuts. Mix by hand, and then pour the mixture into the muffin pan until each cup is 3/4 full.
Bake 20 - 25 minutes for regular size muffins, less time for miniatures. (Makes 12 regular size muffins).

Nice basic recipe to which this health nut would add oat bran, nuts, flax seed, and cinnamon. I'd also do 1/2 of each white and wheat flour, but not more because you have the bran. My kids always call my muffins "colon blow" no matter what kind because I always add other nutritional stuff.

isn't there any leavening in them? baking powder, etc? They do sound good.

I just made some muffins from the recipe on Hodgson's Mill Flax Seed box, added frozen blueberries and dried cranberries instead of the apples, and pecans instead of walnuts. Good and good for you!!

No leavening ... they turn out flat ... I think the flour just holds them together a bit. They are sort of like pecan pie, not puffy and bready like muffins.
