Perfect Oven Roast (Beef)

PREHEAT OVEN TO 500 DEGREES.

SEASON ROAST TO YOUR DESIRE. (I use garlic/salt/pepper)

PLACE ROAST IN PAN OR GLASS DISH.

NO FOIL NEEDED OVER YOUR ROAST.

COOK FOR 20 TO 25 MINUTES AT 500 DEGREES.

TURN OVEN DOWN TO 200 DEGREE F AT WHICH TIME YOU WILL COOK 20 TO 25 MINUTES PER POUND.

LET STAND FOR 15 MINUTES BEFORE CARVING.

Great minds think alike!
I did this just a few weeks ago. Very pleased. The only mistake I made was putting too much bacon across the roast. It was a top sirlion and thought the bacon would give it some moisture. It was delicious but had to clean the oven from all the bacon splatter.

Sounds great! Do you get pan drippings for gravy?

The roast is perfect every time, but no, I do not get enough drippings to make gravy. You might have to make your favorite beef gravy (can or packaged) on the side.

Great question!
I really don't know as I have never tried it. But this beef receipe gives you a beautiful roast with a little pink in the middle, of course that is according to the time range you select. I always like my pork well-done in the middle.
I will be interrested to see if anyone has ever tried pork in this same manner.
Thanks for the question!

I agree! I learned this technique when I was having dinner for my boss and she showed up over an hour late. I've used that idea ever since.
