Pomegranate Jelly?

John brought home 4 large Poms, at 2.00 a piece. I love them but they are just too much effort to eat lol. I decided they would last longer if I made some jelly. I have never made jelly with Poms before. I managed to get 6 pints but I think I might have to re-cook and add more pectin. After adding the sugar and jars etc. I figured it cost just under 20.00 for these 6 pints. Talk about gourmet lol.

Then my neighbor sold her house and told me to take all the Meyer lemons that I could use. I have made 14 pints so far and it is to die for. This is the recipe I used.

I made the first patch of 2 jars like her recipe but these next 12, I did a bit different. I peeled the skins with a potato peeler and chopped them in my chopper and cooked them for a bit and drained off that water and then did the rest like hers, I like this one better. The marmalade reminds me of the Scottish Marmalade, it has a bite to it and we like that.

Then I made two Pizzas from scratch, of course lol....it seems that I always spend Sundays working.

Boy, you have been busy. I love pomegranate jelly. I have a friend that makes it every fall and gives us a jar. It is used sparingly and none goes to waste.

By any chance do you have a recipe for plum butter? My sister-in-law would like me to make some but does not have a recipe. When her mother passed away, her dad didn't want the cook books or recipe cards so threw them out. (That was 26 years ago and I still am in shock over it..)

candy, I get my recipes on line. I got rid of all the cook books too lol. I would make the plum butter just like apple butter and I think both can be found on the web.

I re-cooked the Pom jelly. I added two more teaspoons of pectin and that did the trick, it has jelled already and got tasted too, it is wonderful.

You Tube a site to teach you how to cut Pomegranate. Worth finding makes quick getting to the good part.

Last month I made 10 pints of Apple butter using the slow cooker recipe on here that triggered the idea. It was for our craft bazar but made few for my self and gifts. Apples free from neighbor for the picking. Cooked apple pieces in oven then put thru the foley food mill then sauce cooked in slow cooker with bit of sugar. Delicious.

I used Martha Stewart recipe re Myers Lemons when I was lucky enough to have extra --pack in jar then cover with salt --check it out on her web sight. I could eat them like apple pieces.

Think now it's season for pom's I have coupons so will try this jelly too, Thanks for the idea.
