BTW, I do something very similar to this but I use caramelized onions that I make in the crockpot. I make a big batch, freeze them flat, and then break off as much as I need for whatever I'm making. I also will slice leftover steak and freeze it the same way - just pulling out what I need for a single sandwich (or tortilla). You can google for the onions in a crockpot recipe.

I use a lot of onions when I cook. My husband loves them. I am going to try this and keep some in the freezer.

You warm the tortilla before you fill it. You can warm it up in a microwave by placing a single tortilla on a paper towel and heat for 25 seconds or until the tortilla start to "puff" up. Or, you can heat it on a griddle or in a frying pan until it starts to puff up and then quickly turn it over and heat the other side. You have to keep a close eye on them because it only takes a few seconds to heat up. The microwave method is my choice since I like them hot, but soft and pliable.
