Recipes that freeze well
I need things that freeze well as I am trying to fix for my daughter, so that she can just set it out to thaw in
the moring and pop it in the oven when she gets home at night. She has a long drive home and a hungry family
waiting. Her sons can put in oven for her, I write the instruction on top of all to make it easy. Have done meatloaf,
chicken spag. and a stand by hambuger cassrole. Need some new ideas.
I make a big pot of spag. sauce and freeze it in bags. Lay the bags in the freezer flat and when they're frozen they stack or sit on end. Less sugar than the stuff in jars. Vegetable soup, enchilladas, stews. Use piecrusts with whatever filling you like and make homemade hot pockets.
I agree with tesspug. Burrittos, smothered hamburger steaks, swedish meatballs and noodles.
Give her some good crockpot recipes as well. If you want to do them for her just layer the stuff in the crockpot lined with a reynolds wrap bag, cook until almost done, than freeze in the crockpot, lift out and send it on. All they have to do is drop bag and all into a crockpot and let it heat up over the day.
My mother used to make what were called "Western Burgers" for the same purpose ... she worked at a bank where on Friday's they worked until 8:00PM. We would just take the burgers out of the freezer and pop them in the oven for 20 minutes.
I never did have a "recipe" ... neither Mom or I cook with them. We just "guess" the amounts of the ingredients.
Ground beef - browned and drained
Velveta Cheese - cube it and toss into the browned and drained ground beef - use enough cheese to get the beef well coated, but not sloppy.
Sliced black olives - toss them in with the cheese
Cook over low heat, stirring regularly to coat the beef evenly
When all the cheese is melted, put the mixture on hamburger buns and immediately wrap with foil then put them into the freezer.
Cook frozen and still wrapped burgers 20 minutes on pre-heated 250 oven. The buns get slightly toasty!!

Another thought would be the foil dinners, put into the packets what you like, partially bake (especially if there are potatoes in there.) cool and freeze. Than pop into oven and finish cooking.

I'll post a recipe for a great soup the whole family loves soon. To make lunches for work, I freeze small portions of leftovers in a silicone cupcake tin & pop them out to keep in a ziplock freezer bag. Then when I'm packing up my lunch for work, I take a quick salad and a couple muffin tin size soups. They thaw nicely by lunchtime & I just microwave them for a healthy, hearty meal. If your daughter wants to make big batches in advance, crockpot them. I usually prep the night before and while I'm making coffee in the morning, I get out my crockpot liner/lid combo and the outer portion, plug it in and know dinner will be ready and waiting. Easy peasy.
I buy divided plates and cook enough for two meals. We eat one and freeze one for later. Everything seems to freeze well. I also make large batches of soups, chili, meat loafs, etc and freeze them. Good luck!!!!!

Here are a couple recipe sites.Also,Google once a month recipes.Soup is a lifesaver for working Moms.I just pop it into a large pot,turn on low .....You could also put it in a bowl & micro for a few mins,then heat in the Pot.
One of our faves is baked spaghetti.Frozen meatballs are a time saver,served with pasta or in a casserole.
Try this site for freezer crock pot meals. You might also want to give her a plastic shoe box to thaw them in the fridge as most need to sit in the refrigerator for 24 hours to thaw. Then she can just put them in the crockpot in the morning. Do NOT put the plastic bags into the pot. If she doesn't have a crock pot that can be timed then the sons can switch it to warm at the end of the day so things don't overcook.
