Spaghetti Squash Pie (Mock Coconut Pie)
 
I mentioned this in another forum and someone asked that it be posted. I love different and unique recipes and this pie fits that bill. We took it to a family gathering and only my husband and daughters knew it wasn't real coconut. Needless to say, I didn't bring home any leftovers.

Spaghetti Squash Pie
(Mock Coconut Pie)

1 c white sugar
3 eggs
1/4 c butter, melted
1 T fresh lemon juice
1 tsp vanilla extract
1/2 tsp coconut extract
3 c cooked, shredded spaghetti squash, chopped to resemble coconut
1 9-inch pie shell, unbaked
2 c whipped cream

Preheat oven to 350 degrees. Beat the sugar & eggs in a mixing bowl until light and foamy. Add the butter, lemon juice, vanilla, & coconut extract, and beat until well blended. Stir in the spaghetti squash. Pour into the prepared pie crust. Bake for 40-45 minutes or until a knife inserted into the center comes out clean. Cool on a wire rack. Top with whipped cream before serving.

oh, yum. That sounds good. I love spagetti squash and we have it a lot, but never in a coconut pie. gotta try this one.

How cool! I will have to try this out on the BOM girls. I love unusual recipes too. Thanks for sharing.

Sounds very tasty. I love spaghetti squash, but have never used it in a dessert. I will have to try it.
