Summer Tomato and Basil Salad
5 medium tomatoes, sliced and salted
1/3 cup sliced pitted black olives
1/2 cup crumbled feta cheese
1/2 cup olive oil
1/3 cup red wine vinegar
2 t. dried whole basil or 6 t. fresh
1 garlic clove, minced
1/8 t. coarsely ground black pepper
Arrange sliced tomatoes in 13 x 9" dish. Top with olives and cheese. Combine remaining ingredients in jar and shake vigorously. Pour over tomatoes and cover and chill for at least 2 hours. Makes 8 servings.
Sounds good, except for the olives!!

My tomatoes are just barely starting to turn red. I will have to try it when I finally have tomatoes!!!!
