5 cups sweet potatoes (cooked)
1/4 cup butter 3/4 cup brown sugar 1 tbls milk 1/4 tsp. salt 8 marshmellows 1 cup corn flakes Mash sweet potatoes. Add butter, sugar, milk and salt. With tablespoon scoop up about 1/4 cup of the mixture and shape around marshmallow, using more potatoes as needed to make balls. Roll each ball in corn flakes. Place on buttered baking dish, cover with foil and freeze. When ready to serve, bake until marshmallows begin to ooz. About 20 minutes. Makes 8 balls If desired, add chopped nuts and/or coconut to sweet potato mixture. |
One of my favs. I use canned/drained sweet potatoes. I put chopped pecans in my flakes (Wheaties). I double the batch and have a yummy - almost dessert like addition to any meal, just in the freezer waiting to be pulled out and popped in the oven. Put the potatoe mixture around a BIG marshmellow.

This sounds really good but I am a bit confused. 5 cups of pumpkin and you use about a 1/4 cup for each marshmellow and only get 8 of the balls made? Gotta try it.
