Sweet Potato Tip and Recipe

Probably many of you already know this, but although I read it in my original Crock Pot booklet in the 1970's, I never remembered to try it. Seeing it here http://www.food.com/recipe/baked-swe...rock-pot-56978 with all the 5 star reviews made me want to kick myself for letting it get away from me all this time. Even if you plan to do something fancier with them, many sweet potato recipes start with cooked sweets. I think I'll cook them for a little less time if they are going to be cooked again in a recipe.

Here's what I plan to do with them this Thanksgiving: http://www.heb.com/recipecat/Walnut-...4535001/700160 Our book club host served these recently, and they're probably the best I've tasted. I plan to use Craisins instead of fresh cranberries because I have a huge bag from the big box store and need to find uses for them. I'll probably cut back on the sugar somewhat because Craisins are already sweetened.

Sounds wonderful. I am going to try it for our next Pot Luck. Thanks so much for sharing.

Another timesaver - I bake about 2 dozen when they are fresh. Let them cool completely, wrap in waxed paper, seal in heavy duty plastic bags. During the winter they are great when popped in the microwave for about 3 minutes.

3 minutes from the freezer?! That's great to know!

I cook them fresh in my "potato cooking bag", takes about 3 minutes for one and oh are they great.

Thanks for the info....

It takes about 3 minutes to microwave a sweet potato. I poke it with a fork and wrap it in a paper towel, and rotate upside down and inside out once. Extra minute for each extra potato.

RoseP ... a delicious looking recipe that would present nicely.
I'd probably not do the double cooking, nor in the oven ..... and would put all into the crock!
