What are you making with your holiday leftovers?
 
I cooked a boneless turkey breast yesterday in the crockpot (slowcooker). Only two ingredients - the turkey and organic vegetable broth. Turned out really delicious, moist and tender. 3 hours on high, then 5 hours on low. Oven roasted vege's, dinner rolls and pumpkin pie. Kept it simple this year.

There was only 3 of us eating on it so there's quite a bit left.

Thinking about making turkey and dumplings for supper. Kept quite a bit of the broth yesterday so will use that for the soup base. Add some carrots to it, dice up the turkey into bite size pieces. I will make the dumplings from low fat Bisquick.

When my youngest was about 7 or 8, he was helping me cook supper and we were using leftovers. He told everyone we were making supper from scraps! Can you tell his mother is a quilter!

I cooked for two....no leftovers except for one meals' worth for DH tonight. Prior to baking, I cut the pork loin in half and froze one half for later. I hate leftovers that hang around for days...ugh! (Except cookies!)

My leftovers don't need revamping. I made roulades (tradition) with mashed potatoes and sour cream gravy. Then after dinner I made pepperoni rolls (another tradition). I sent some leftovers home with daughter, some in fridge for my son that will probably be gone by the time I get home from work and then some came to work with me. Well, I did save a small amount of potatoes out to make potato pancakes tomorrow on my day off so I guess that's the closest thing to revamping leftovers. Love Bisquick for dumplings, I know the old fashion way by scrap but this makes it so easy and it's the way I taught my daughter to make them. Which was the easiest way for her. I hope everyone had a great holiday and please stay safe out there this week. Now on Friday I'll help celebrate my only daughters 24th birthday; she's my baby and has 4 brothers that came before her. I always take off work for her. Her oldest brother is in his early 40's so I had given up on a girl when she came along. I'm so blessed.

We did a seafood fest yesterday. We had crab legs, jumbo shrimp, muscles and clams. There were not many left overs. But I did have a lot of left over desserts and those went home with my dd's boyfriend.

Had some warmed up tonight and will probably make turkey croquettes with some of the turkey. They are so time intensive though!!!

Making potato dumplings with the left over potatoes.......... cut way down this year on everything. Just a few other leftovers that can be warmed up........... Kids and grand kids took their share of candy and cookies home.... Son has said he will take any candy and cookies that are left on Sunday to a Packer game party.........

I baked a ham, so today I fixed a new england dinner. I love roulades, do you do the German version. We spent 6 years there so learned a lot of the cooking.

For Christmas day dinner we had surf&turf, parsley potatoes, green veggie.....all gone!!!!!!But am now making split pea soup from hambone and scraps from daughter's house from C/Eve's ham, yum, yum......Happy New Year to all

We had bone in Ham for our holiday dinner along with a few others things from friends who came over!LOL so we took the ham bone and put it in the crock pot; let it cook and then made ham and bean soup out of it. Turkey/Roast beef sammichs for lunches, and a dinner. Potatoes for potato pancakes as we call em. Even the avatar got some Christmas dinner too and left overs (without any onion or garlic mind you!LOL).

We always have Ham for Christmas. One of our favorites using left-overs is Corn Chowder.
Here is the recipe:
Chop Ham into bite-size pieces.
Cut Potatoes into chunks and boil until fairly soft.
Combine the 2 and add a can of Creamed Corn.
Stir well, heat and add Salt and Pepper.
Stir well and heat on low, so it doesn't stick.
This amount will serve 2, by adding bread/butter, glass of milk and cookies.
***Is a quick casserole when you are tired and would rather be quilting!!
Takes about 10 minutes--tops, start-finish.

We had tons of food and I sent all of it home with everyone, except 2 plate lunches. Everything is gone. Now I can start over. I did make a big pot of vegetable soup before Christmas, so we would have something light to eat after all that heavy food.

Thanks everyone for sharing what you did with the leftovers. My family also loves leftover mashed potatoes made into pancakes.

My DH said the turkey and dumplings were delicious. I could not have any though. Dentist has me on a cold, soft food diet because of a dental problem. Oh well, I got to sniff it!

Our daughter always makes up 2 casserolls to take home, it is a 7 hr drive for them and she just has to heat when they get there. We made one for the 2 of us also. they left around 8am this morning. A big help for them and us.

About 5 years ago I started doing a beef roast, prime rib or rib roast. The last two years we've been going to my son's home in CO. This year he got the roast from his work for free. There was leftover meat, the only thing leftover and we brought some home. Last night for dinner we had french dip sandwiches for dinner. Boy were they good.

I will make ham, spinach, and cheese quishe from the leftover ham. I froze 1/2 of the ham after cooking it. It was boneless and very tasty. Made shepards pie with the leftover mashed potatoes and corn/peas. Just cooked some hamburger and layered it with some veggies some cheese shreads and covered it with mashed potatoes. Have a breakfast brunch at church for Sunday-so either of these dishes can be frozen and used for that unless we eat them first- then I make another! I will be using the crockpot more as it is winter and I like to have meals ready when everybody gets home, farmers don't keep schedules very well-so planning can be a bit difficult sometimes. The pepperoni buns above sound very interesting, I'll be watching for info on them!

I made "champagne basted turkey" a vintage recipe I've used since 1965, and then hubby made gumbo with leftovers minus some white meat slices which we held out for eating. All turned out delish.

I'm making turkey enchiladas with the leftover turkey. Turkey soup with the carcass and sweet potato bread with the left over sweet potatoes.
