What is your favorite Christmas cookie or candy?
 
Do have a favorite receipe for Christmas time. I have a wonderful receipe for peanut patties, so yummy and buttery. Word of caution: give most of it away.

3 cups sugar
1 cup water
1 cup white karo
dash of salt
Bring to boil then add:
3 cups raw peanuts
Dash of red food coloring
Bring to soft ball stage and remove from heat the add:
2 sticks Parkay (must use Parkay)
1 Tsp Vanilla
Stir with wooden spoon until color is no longer glossy and pour on to cookie sheet.
When cool, break into pieces.

i love to make homemade marshmallows for the holidays. i make 2 batches: one vanilla with a little cocoa and cocoa to dust them, and one batch with peppermint flavor and red swirls. they're even better dipped in a thin chocolate coating! here is the recipe i use:

Peanut Butter Balls
2 cups smooth peanut butter
1 ½ sticks softened butter
2 pounds powdered sugar (4 cups)
3 cups Rice Krispies
1 pound chocolate almond bark

Blend together both butters, make every attempt to not melt the butter. In a large bowl bring together the powdered sugar and Rick Krispies. Bring both mixtures together. Starting with a strong spoon is good, but usually switching to your hands is best. Work the mixture into small balls about the size of a nickel/quarter. Roll the balls making them as smooth as possible. Refrigerator for an hour or place in the for 30 minutes to firm. Melt the chocolate almond bark in a double boiler and using a toothpick /spoon dip each peanut butter ball. Place on a parchment covered pan until they are set. Store in a cool dry place.
Microwaves are great for melting chocolate, but you’ll find that you have to reheat to keep the chocolate thinned out. The double boiler is truly a better move
Yields about 60 peanut butter balls

Thanks for the recipe for Peanut Patties. Growing up in Texas I used to buy them a lot and they were one of my favorites. Don't know if they are still sold, but they aren't here in California. I'll try to make some soon.

I make those Peanut Butter Balls every year at Christmas. They are my son's favorite so he always gets a big bag.

a candy/cookie
 
1 sleeve graham crackers crushed with rolling pin. 1 6oz pkg chocolate chips, 1can condensed milk (not evaporated!), 1/2 cup chopped pecans. Powdered sugar.

Mix crumbs, condensed milk, pecans and chocolate chips in bowl. Mixture will be very thick. Spread in 8x8 buttered pan. Bake in 350 oven about 20-25 min. remove let cool 10 min. While still warm cut into 1 1/2 in squares. Remove from pan carefully with fork==== dust all sides with xo sugar. Store in covered container--they freeze well.

It is a lot of work, though, which is good because it keeps me from eating it all the time! Since it was just a Christmas thing and took a lot of work, I absolutely hated it when my Mom required me to make it then GAVE IT AWAY!!! Ooh, for a little while, I could feel the Scrooge in me coming out! (If you wanna give it away, make it yourself!) Grrr!

Rich Roll Cookies, also from The Joy of Cooking also takes time and effort, also taking away any holiday spirit!

I think the icing is butter and powdered sugar and vanilla extract. I believe the recipe is on the sugar container.

Home made Rum balls! I rarely drink even wine, but rum balls are a special treat to give, and I admit to some taste testing! It's been a few years, but I think the recipe came in a Bacardi booklet, and is probably online these days.

I grew up with Grandmas' German Lebkuchen, Pfeffernusse, and Springle cookies and it would not be Christmas without them. A dear neighbor lady would make divinity fudge and I helped crack the walnuts for it. My family now enjoys dark chocolate covered orange peel. I could eat it year round and it by far my favorite candy! You boil the orange peel three times to remove the bitterness, then boil in sugar water and let dry. Dip in dark bittersweet chocolate half way up the piece of peel. When cool enjoy slowly and savor!:)

I love orange peel too. But it's a close call with maple nut fudge.
