Hi everyone! The kids love this recipe and it makes a generous amount. They're called Pumpking Baas here and Punkin Bwownies, too. Whatever you call them, hope you add "mmm are so good". You can place bars in snack size sandwich bags for treats on the go. I made them for my moms group this weekend and everyone remarked about how great they are.

Pumpkin Bars

Cake:
4 large eggs, beaten
1 cup vegetable oil
2 cups sugar
1 cup canned pumpkin
1/2 teaspoon salt
2 1/2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
2 cups flour
*optional sprinkling of allspice

Frosting:
3 oz cream cheese
6 Tablespoons butter
1 3/4 cup powdered sugar
1 teaspoon vanilla
*optional dusting of cinnamon/sugar combination


For the cake: Preheat oven to 350 degrees. Combine all the cake ingredients in a large bowl, stirring thoroughly with spatula. Pour into greased cookie sheet with solid sides. Bake 20 minutes or until done.

For the frosting: Combine all of the frosting ingredients (except optional dusting) and mix to desired consisency. Frost when cake is completely cool. The dusting prevents the cream cheese icing from sticking to baggies.

They sound a little complicated but are super easy to make. Enjoy :D

My Mom would make a large pan of pumpkin bars every fall for our family homecoming festivities. Thanks for sharing. You brought back some great memories. What a wonderful recipe to share at this time of yr. with the pumpkins ripe on the vine for picking.
