LOL, when I read your title I have to admit my first thought was "What's wrong with them?" (... that they need to be fixed.) Shame on me, I'm from the South, too.

Ok.....I'm going to shop today and buy a few of these and try the recipes...they all sound tasty......never really had them growing up, but we love veggies, so I'm going to introduce this one to our table........
