Thread: Sopapilla Cheesecake

    Okay, you know that any recipe that starts with two cans of Pillsbury Crescent rolls isn't going to be "haute cuisine," but this dessert is ridiculously easy and unbelieveably delicious.

    Preheat the oven to 350

    Grease a 9x13" pan.

    Open up one can of crescent rolls, unroll and line the bottom of the pan with the rolls.

    Beat 8 oz of cream cheese (lo-fat is fine) with a cup of sugar and a touch of cinnamon. (A hint of lemon extract would be good too, come to think of it)

    Spread the cream cheese over the crescent roll dough in the pan.

    Open the second can and layer the dough over the cheese mixture.

    Melt a stick of butter in the microwave, mix in a half a cup of sugar and a teaspoon (or two) of cinnamon. Pour evenly over the top the of dough, spread with a brush or a fork.

    Bake for 35 minutes, let it cool for a bit, then cut into squares. Delicious chilled, too.

    I couldn't believe how wonderful this is and it only takes ten minutes to put it together. :)

    Sounds good to me, but I had to smile at the picture of using lowfat cream cheese, then pouring butter over it. Thank you for recipe.

    Yes, I thought lo-fat and butter would be a rather odd combination, myself. Kinda defeats the purpose, hm? LOL!

    But, I had read somewhere that a gal had used the lo-fat type and it had turned out fine so I thought I would include the info.

    I don't ever have lo-fat anything in the house - you can tell by looking at me. :mrgreen:

    Well, I like Diet Coke and Ice Cream...see the calories in the ice cream is offset by the Diet Coke.

    Best friend is coming for a visit and I'm going to try recipe!! We're going to be sewing and lazy (and eating!)

    Speaking of Diet Coke... you can put a can of it into a regular chocolate cake mix in place of the butter/oil/eggs, mix it just to get it blended and bake it and you'll have a really good chocolate cake,

    Apparently with this cheesecake recipe, you can substitute lo-fat rolls and cheese, use that artificial spread in place of butter and substitute Splenda for half or more of the sugar and it's still delicious. I'm going to try that next time.

    I'm also going to sneak a can of cherry or lemon pie filling in between the cheese layer and the top crust and not put any cinnamon in the butter.

    I have made this recipe for years. Easy to pick up and eat.
    It is fast and very good
