Zuchinni Squash

3 med. zuchinni, sliced
1 large onion, cut into thin rings
1 lg. can chopped tomatoes
4 oz. shredded cheddar cheese

Brown the zuchinni either in a non stick pan or in a little bit of oil until it starts to turn brown. Add the onion and continue cooking until the onion starts to get soft. Add the tomatoes and simmer for 20 min. Put the cheese on top, allow to melt, and serve.

Squash & eggplant

3 summer squash, sliced 1 eggplant, cubed
1 large onion, sliced 1 can diced tomatoes
2 cups shredded cheddar cheese 1 tsp. granulated garlic
1 tsp. basil pepper to taste
2 Tbs. Olive oil

In a Dutch oven or large pot, sauté the onion in olive oil. Add the squash slices in layers seasoning with pepper, garlic & basil. Add cubed eggplant & sprinkle with seasonings. Add can of tomatoes & sprinkle with garlic. Simmer till all begin to soften. Remove half of mixture to a bowl. Spread remaining half out evenly in pot. Sprinkle with 1 cup of cheese. Add remaining veggie mixture & top with remaining cup of cheese. You can either simmer on stove for 10-15 minutes or bake in the oven a 350 degrees for 15 – 20 minutes.

This is how I cook all my squash, except I turn mine upside down on a dinner plate, microwave on high for 10-15 min
take out and turn squash over, score the squash with a knife add butter and brown sugar( splenda brown sugar) spread all over squash, return to oven for 2 mins. YUM!!!!

My favourite squash is butternut. Simple prep...

Remove seeds, peel, and cut into inch size pieces. Put in a cassarole dish that has a lid. Dot with butter or margarine, very lightly sprinkle with freshly grated pepper.

Bake covered @ 350° F for about 1 hour. Yumm!!!!

cut up zuchini, onions, tomatoes, garlic,green or any other kind of pepper and whatever other wonderful veggie you have left from your garden, put then in a pre heated pan with Olive Oil. Let them cook and keep stirring till tender. Wonderful with a steak from the grill or even chicken!

for winter squashes i usually take the seeds out, then i add finely chopped garlic and onions to the center hole, pour a bit of margerine over the edges and bake until it's soft. then take the shell/skin off and mash it or fork it out depending on what kind it is. then i'll serve it either with bacon bits and sour cream on it or stir in a bit more margering and some parmisian cheese. super yum!
works with spahgetti squash, acorn, butternut, pumpkin, ect. pretty much any winter squash.

then there's a quiche which i always love. i don't use a shell for mine but you can easily buy one or use bread crumbs.
bake half a large squash.
prepare your choice of meat. i usually a small amount of bacon cooked to extra crispy. ham works good too. i've heard other people adding different meats but haven't tried it.
shred a bunch of cheese, i usually use marble or chedder. just about anything is good, and mix in about half a cup of parmisian cheese
finely chop 1 onion, a celery stalk, a red or green pepper.
mince some garlic. a clove or two will do.

mix 4 eggs with a bit of milk and half the cheese mixture.

grease a baking pan well. layer the veggies and bacon as desired and pour the egg mixture in. top with cheese. bake at 375 until it's done. i forget how long. the cheese on top will be golden.
this is my all time favorite dinner
