Living in the heart of potato country, having worked for the potato farmers and living on them... we are always trying new things with our spuds. We even make our own chips. These are so yummy, and my entire family loves them. You can also not use seasonings at all on these. Just spray your pan with a little pam and cook. Leave the skins on, or peel them... either way... yummmy.

I make something very similar using a spicy seasoning. I find that I don't need much oil at all, just enough to barely coat the wedges. They're a great healthy alternative to greasy french fries!
