3 C. summer vegetables, diced - zucchini, yellow squash, patty pans, onions, mushrooms, and any other vegetables you like.
1 Can cream of chicken soup
1/2 stick butter (optional, but so good)
2 C. Chicken brith
1/2 Bag stuffing cubes
Saute vegetables. mix in soup.
Dump into bottom of greased casserole dish.
Mix stuffing with chicken broth and melted butter.
put over the vegetables.
Bake at 350 degrees for 35 minutes.
I have even had people how do not like zuchinni, love this recipe. They went back for thirds.
