What would YOU do with the dozen egg YOLKS you don't use for this cake???

I would either buy just the egg whites or use the yolks for home made lemon curd. If I use egg yolks in a recipe and don't use the whites, I freeze the whites and use them at another time. So for a recipe like this, I would use frozen egg whites. Good luck!
