I seen this and just had to share! its been a long time since I made one, and I do plan to make it for my next small group! and wonder if I can make substitutiond on some of this?


7-Up Pound Cake

'Our Favorites,' Unobee Chapter, DAR

3 cups sugar
2 sticks margarine
1/2 cup shortening
5 eggs
1 tsp. coconut extract
1 tsp. lemon extract
1 tsp. vanilla extract
1 tsp. lemon juice
1/4 tsp. salt
1 cup 7-Up
3 cups sifted flour

Cream sugar, margarine and shortening. Add eggs, one at a time, beating after each addition. Add extracts, lemon juice and salt. Add flour and 7-Up alternately, beginning and ending with flour. Pour batter into greased and floured Bundt pan.

Bake at 325 degrees (do not preheat oven) for about 1 hour. Test for doneness. Cool in pan 10 minutes.

this sounds so good I was looking for someting for club tomarrow think I will get ome berries too. :lol: ;) Thanks

thats why I was wondering if there can be any substitution. I think the sugar with the artificial sugar could do it. the rest I really don't know, don't want to mess up a good thing!

Sounds wonderful…think I will use it (thin slices) for strawberry shortcake this weekend. But I will make it using fructose instead of the sugar and egg beaters in place of the whole fresh eggs. If you choose to use a substitute sugar, just follow the package instructions and you should have no problem. Thanks for sharing and Happy Memorial Day weekend!

OK this is a little off topic-but still it is related. If you want to good laugh go to utube and look up Jeanne Robertson and see her videos. She does one on this recipe. She is a hoot!!

I guess we need to experiment, I think oil would be good. I do have shortening, maybe we need to melt it, check out the amount when melted, then measure oil in seperate cups and seen how much the difference is. you don't want to put more oil in the recipe than what it is called for. .
