Sweet Potato filling for Southern fried pies

For ncredbird,
2 to 3lbs. sweet potatoes sliced thin into bite-sized pieces
1/8 cup water
1/2 stick butter
1/4 cup brown sugar
1/2 cup sugar or as sweet as you like
dash of cinnamon
dash of nutmeg(optional)
2 - T. cornstarch
pinch of salt
1 egg
1/4 cup cold milk
In the microwave cook sweet potatoes & butter in water for approx.15 to 20 minutes or until tender.
Meanwhile stir together:
Brown sugar, sugar, cinnamon,optional nutmeg and cornstarch & salt,set aside.
Whisk egg and milk. add to sugar mixture then gently fold into sweet pototoes. Cook an additional 5 min. Allow to cool to room temp. or refrigerate. Ready to eat or put in fried pies. * Note * sweet potatoes may be mashed if desired.
