One of the easiest ways to control bias is Elmer's. Before you cut the square, simply smear Elmer's across the cutting area and let it dry. It will not allow the bias to stretch.

Plastic cloth on table or something to protect tabletop. Then soak a bathtowel and spread over the mat. Leave for several hours. Then remove towel and let mat dry.

Your points look fine to me. The reason the two side rows don't match point to point with the center row is the chocolate sashing. Without that the points would match - at least in my opinion.

I think when working with homespun you need either a serger and/or 5/8" seams instead of 1/4", but that's just my opinion. The weave of that stuff is not tight enough for 1/4" seams.
