Though they are all lovely fabrics, I think they compete with the rainbow colors and will dominate the quilt. My vote would be for the mottled grey or another more subtle color for the sky.

Do a zig-zag stitch on the cut ends of the fabric to prevent ravelling, then wash and dry just like you would a receiving blanket.

Depending on the colors in your room of course, but I think a narrow border of the dark grey (almost black) to frame the quilt and then one of the softer colors that's in the quilt as a wider border....

I think they are both lovely and that it depends on what look you're going for. The one with small green leaves seems to give a softer look to me and the plain makes the other fabrics much more...
