We mostly use pork on the bogrács, for gulyás or pörkölt (basic meat stew). Sometimes deer, but beef is too expensive here.

Hello!
I'm living in Budapest and we have A LOT of gulyŕs! The trick I've seen is to simmer the onions in a little fat with the onions and paprika, then brown the meat cubes with it on medium heat...
