If you are sending it out to be quilted, go with any fabric you like. Since it is for a couple, I might go with a gender neutral on the back so it can be used as a reversible quilt. Perhaps a stripe,...

Yes, decide on what thread you will be quilting with and match the backing to it. A print hides stitching mistakes better then solid.
