Maybe strips of batting in the channels? that would be the fifth layer in the seam. Then once the whole thing is together you may even want to add some funky top stitching.

What I was seeing is that you have a front and back then you add a new strip to both front and back and serge all four layers. When you flod back the new strips you now have the front and back strips...
