Here's the method I like:
http://www.quilterscache.com/H/Howtomakegeese.html (Method B, about half-way down the page). It's the same principle, but you don't have to pin your first squares to keep them out of the way.
I also like the one-seam method if I'm making something where it's okay for the geese to be three-dimensional. It's a fun method to do - seems almost like magic!
