That sounds yummy, think I would roast them first though because love the taste of roasted beets...so I bet would be great in your salad.

I personally don't eat beets to me they taste like dirt sorry. I did make a salad last night and put beet slices on my salad.
I feel the same way about them, but grow them to pickle for my husband. Here's one recipe I tried, and I actually ate the beets and didn't mind them. Once a year is enough, however!
