don't give up, your stitches are beautiful. As for rocking the needle maybe you have too much tension on the material, hand quilting needs to be just a little loose, you should be able to press it down just a little in the center. As for the frame, everyone has their fav but mine is the q-snap, easy to reposition and move about with you
