Here's the recipe for my favorite veggie casserole ever!
Muzzy Casserole
16 oz. frozen broccoli, cauliflower, carrots (sometimes called California blend)
4 oz. (1 cup) shredded mild cheddar cheese
1 cup "lite" mayonnaise
1 cup chopped celery
1 medium onion, finely chopped
1/2 cup melted margarine
1 sleeve,buttery round crackers, coarsely chopped (about 35
Cook veggies according to the package directions and place in a greased casserole. Combine cheese, mayo, celery and onion and spread over veggies. Combine melted margarine and crushed crackers and sprinkle over top. Bake at 350 degrees for 30 minutes. Serves 6 to 8. Doubles well.
