I think you have too much when you are no longer enjoying it. this could be because it has filled up your sewing space, because you ran out of money, makes you feel guilty because you will not use it all etc. I think there is nothing wrong with getting fabric and not using it. If you can afford it and it makes you happy to shop for it and collect it then it has served its purpose.
