I make lemon pie with Eagle Brand (or store brand) sweetened condensed milk. I just use the can of milk plus lemon juice and it sets up to a nice soft consistency; my SIL puts eggs in her and bakes it, so it's a bit sturdier. Either way is delicious and pretty foolproof.

As far as the lemon merange pie....when I cut into it to serve it, the innards looked like cellulite before the first bite was taken. I will not use corn starch again in my pies! I drained it in the sink and then it was ok! Tasted really good though!
