Amish quilts were often made with woolen fabric, and that's what first came to mind when I saw your picture as you have nice assortment of light and dark. Most woolen fabric will not ravel so applique without turning under would work wonderfully. I'm not sure if you would like it but think organic country style with fairly large hand quilting stitches or log cabin. I am envious. Look up folk art quilts and get inspiration there.
