I sometimes make all the blocks and if they are supposed to end up as 12 1/2 inches I will wait to get them all sewn and then hopefully trim them to size. Sometimes for whatever reason I will have the odd block that is already a little smaller than that so I'll trim to that size. I don't think it matter when you do it as long as you get the results you want.
