Sunrise, I've made all of my blocks with the seam open. I got in trouble in one swap, because I didn't read the directions properly & I didn't press my seams open. It does help so everything lies flat. I hope I'm okay by not pressing them to the side. I just got in the habit after that of always opening my seams. Looks like the majority press their seams to the side.
