Simple, simple, simple! Recipe inherited from MIL.
12 red peppers 12 green peppers 12 onions
3 T. salt 2 cups sugar 2 cups vinegar
Grind onions and peppers. Cover with boiling water and let stand 5 min. Drain. Add to vinegar, sugar, and salt. Boil 5 min. Put into jars and seal.
There is always more liquid than I like, so I use many more peppers and onions than called for. I started with a gallon or more of peppers yesterday and ended up with 7 & half pints. All hot peppers. I love it hot! Some people mix bell peppers into mixture with red hot peppers (or vice versa.) We love it on red beans as well as hot dogs. Re the sugar, I like the way it cuts the "hot" a bit, but you can do what ever you like, I suppose. Our recipe is just called "hot pepper relish". Piccalilly might be diff. Just occurred to me--doesn't that have green tomatoes in it also?
