It is a awesome pattern and most I have seen are just stitched down the seams. I did see one that pebbled the paths but boy that would be work! SITD would be fairly difficult if you followed the paths, turning the quilt. I think I might be tempted to quilt it in a grid that matched the path width. Yes, you would be stitching through the paths but if you matched the thread it would not be noticeable. It would end up looking like a large graph paper but that wouldn't detract from the pattern in my opinion.

You didn't mention if you would be quilting it on your sewing machine or a long arm. If you have a long arm, anything goes.
