I would trim each block to the same size and put them together in a different setting so that those centers aren't together. The centers not lining up would bother me. If the blocks are rearranged, no one would ever know that the center squares aren't the same size. Not putting on the sashing would just make the finished quilt a little smaller. She could always add borders to make it bigger if wanted.
