Unfortunately, I have no idea how much white fabric I used... and it would really depend on what size quilt you decided to make. I just picked something from my stash that I had a pile of. If I had had enough light 2.5" scraps, I would have used them the same way as the colored 2.5" scraps. I think that would have looked even better.
Please post a picture of your quilt when it is finished. I love seeing the new and improved versions that others make.
