Mega Moist Double Chocolate Banana Bread

1 stick butter, room temperature

1/2 cup brown sugar (light or dark), packed

1/2 cup granulated sugar

1 Tbsp. real vanilla extract

2 large eggs, room temperature

1/2 cup cocoa powder, unsweetened

3 ripe bananas, mashed

2 tsp. baking powder

1 tsp. baking soda

1 tsp. sea salt

1 3/4 cups all-purpose flour, sifted

3/4 cup hot water

1/3 cup dark chocolate chips

To garnish top: mini chocolate chips, to cover top well

In bowl with electric mixer with paddle attachment cream butter, brown sugar, sugar and vanilla at medium speed until light and fluffy, 5 minutes. Scrape down sides and bottom of bowl. Add eggs and mix for 1 minute more or until well combined. Then add cocoa powder, mixing until smooth. Add the mashed bananas, baking powder, baking soda and salt and mix on low until completely blended. Gently fold in flour until barely combined, this do with a spatula by hand. Dump in hot water and whisk to combine, add the 1/3 cup chocolate chips and stir lightly to combine. Set aside for 10 to 20 minutes while preheating oven. When oven reaches 350 degrees, grease a 9 x 5" loaf pan then line with parchment paper letting excess fall over two long sides of pan. Pour batter into pan, sprinkle with mini chips and bake in center of oven for 60 minutes or until edges are set and middle is puffed up and cracked down center. Let sit 10 minutes to cool, then using parchment overhand pull bread out of pan and let finish cooling. It is delicious!
