    Just in Rapid City, SD and went to "On the Border" for lunch and we had fried Avacado, thin wedges dipped in tempora and deep-fried with a mustard/horseradish sauce and salsa, VERY good. On my mixed plate, I had a half avacado with pulled chicken and cheese dipped in tempora and fried. SOOOOOOOOOO goog!

    This one has a zillon calories but it's worth every one of them.
    Avacado Pie
    1 graham cracker crust or make your own with 1 cup graham crackers, 1/4 cup butter and 1/2 to 1 cup finely chopped walnuts

    Filling: 1 large avacado, 1 - 14 oz can sweetened condenced milk & 1/4 cup fresh lemon juice. Put all in a blender. Blend until smooth and pour into pie shell.

    Topping: 1 cup sour cream, 2 T milk. Blend and pour on top. Sprinkle with chopped walnuts. Chill over night.

    I have fun not telling anyone what kind of pie it is and let them guess after they've tried it. Most of the time they never figure it out. Even people who don't like avacados usally like the pie.

    Here is my Guacamole recipe:

    Chunky Guacamole

    1 tomato chopped
    1/4 cup chopped onion(I use red)
    1 large clove garlic minced
    1 jalepeno pepper, minced(remove seeds)
    2 ripe avocados(preferably Haas) cut into 1/2" cubes
    2 tsp. lime juice(can use fresh or bottled)
    1/2 tsp. salt

    Combine all in a bowl, and gently toss. Taste and add additional alt, lime, or jalapeno if desired. Serve with chips or raw vegetables, or use as a topping for taco's, etc.

    Zesty Lime & Avocado Slaw•

    1/4 cup fresh lime juice

    zest of 1 lime

    2 teaspoons sugar

    3 cups napa cabbage, thinly sliced

    2 tablespoons fresh cilantro, chopped

    2 Florida tomatoes, seeded and chopped

    1 avocado, halved, pitted, and diced

    Toss to combine..you can add a little Walnut or Hazelnut oil if you wish

    mashed avocado
    alfafa sprouts
    thin slice of red onion

    Avocado Salad

    • 1/2 watermelon cut into1 inch cubes
    • 1 small English or regular cucumber, peeled, seeded, and cut into 3/4-inch cubes
    • 30 grape tomatoes, halved
    • 10 small basil or mint leaves
    • one avocado
    • 1/4 cup balsamic vinegar ( I like using white balsamic)
    • 1/2 cup olive oil
    • Coarse sea salt and freshly ground black pepper, to taste

    Combine the watermelon, tomatoes, cucumber, basil or mint in a large serving bowl.
    Place the vinegar in a small mixing bowl, whisk in the oil, add the mixture to the salad, and toss well add avocado Season with salt and pepper, and serve either chilled or at room temperature.

    you can change it any way you like, if you don't have grape use cherry or 3 or 4 small to medium red and/or yellow tomatoes. You can do 1 tablespoon chopped mixed fresh herbs, in any combination: basil, tarragon, chives, and cilantro

    Avocado / Tomato /Mozzarella Salad


    2 avocados (peeled, pitted, & cubed)
    2 - 3 tomatoes (cubed)
    1 ball fresh mozzarella cheese (cubed)
    2 Tbsp extra virgin olive oil
    2 tsp. basil (we used dried, but you could use fresh)
    salt & pepper (to taste...I like it saltier than Dakota does)

    Put the cubes of avocados, tomatoes,
    and mozzarella in a bowl.
    Drizzle with olive oil.
    Add basil, salt & pepper.
    Mix lightly.
    Enjoy.
    (Best to eat it right away.
    At room temperature.)

    You need to hire 10-year-old to climb that tree for you. Sure wish I could get some - ours are $1.50 for tiny ones. When I make guacamole, using 4 avocados and 2 tomatoes, I can eat the whole batch by myself. They're good for you, I tell myself.

    Thanks for all the great recipes. I need to try a few of them.
    My neighbor make an avocado chocolate mouse. Can't eat much it very rich.

    No great avocado recipes from me, sorry! I have been to Roxanne's in Carpinteria. So glad to see another fabric store go in after the Treasure Hunt closed. Nice fabric- very pricey. I didn't see anything under $11.99/yd. They had some beautiful refurbished Featherweights in there.
