    Our most recent favorite side is asparagus. Even my 19 year old likes it! I think the kosher salt makes a difference. It's a quick and easy microwave recipe. http://homecooking.about.com/od/vege...s/r/blv309.htm

    My family has to have Brussel Sprout Casserole....quick & simple
    1 pkg frozen brussel sprouts
    1 jar pearl onions (drained)
    1 cup onion sage croutons
    1 cup shredded cheddar cheese
    1 can cr of mushroom soup
    1 tbsp soy sauce & a bit of pepper.
    Mix all together pour in casserole dish and bake at 350 degrees for 30 to 40 minutes just until bubbly and browned around the edges. Delicious!

    That sounds so good. The one thing I did not understand was "a bit of pepper". Are we talking table pepper, ground (by pepper mill) pepper or little chunks of green and red pepper (vegetable)? Thanks in advance. Sounds really good. Edie

    Years ago I started my tradition of a pot of steamed, fresh veggies. No sauces, just "clean" eating. I can hardly stand heavy, sauce laden side dishes. Don't get me wrong, I still indulge in gooey, sugary desserts but having a meal that is not so heavy in casseroles, etc, I don't feel as bloated and miserable. Full, yes. Overeat, of course. Just nice to have a healthy dish.

    Great way to steam asparagus...trick is dividing that pat of butter into eight pieces( ha,ha)

    I made a corn casserole using Jiffy cornbread mix. I also bought a jar of mixed bean salad at Costco but added a can of drained whole kernel corn to sweeten it up a little bit. Was very good. Also made a raspberry, pineapple, walnut congealed salad, which was very good.

    DH and I went to DD's for Christmas- just the 3 of us, She is a great cook, and makes delicious Mexican food, so she cooked a big pot of pinto beans, made Spanish Rice, and delicious Enchiladas and we had tossed salad- We will have our main Christmas in Jan when our son can get to come home- may have some ham or turkey and dressing or maybe steaks and for side dishes, cranberry salad and cornbread salad, and corn on the cob. Hope everyone had a great Christmas. I was out of town, so didn't get to post this on Christmas day.

    Brussell Sprouts and Bacon

    Fresh Brussell Sprouts (1-1/2#)
    4 slices bacon
    1-14 oz. can chicken broth
    1 tbls. brown sugar
    Salt to taste

    Cook bacon in large pot until crisp. While bacon is cooking clean and cut sprouts in half. Remove bacon from pot and set aside. Put chicken broth in pot with drippings and add sprouts and brown sugar. Cover pot and cook about 8-10 minutes until sprouts are tender. Remove from pot with slotted spoon and place in a serving bowl. Crumble bacon and add to sprouts...stir to mix and serve.
